Pasta Maccheroni Calabresi alla Norma

Cooking Time: Recipe 25 mins /Pasta 13 - 15 mins

Serves: 6



  1. Cook pasta in plenty of boiling salted water
  2. Meanwhile, heat oil in a large frying pan over medium heat
  3. Add eggplants and cook until softened and golden, stirring occasionally
  4. Add another splash of oil
  5. Add garlic, capers and dried oregano
  6. Cook for a further 2 minutes
  7. Add vinegar and tomato sauce
  8. Stir gently and simmer on low heat for 15 minutes
  9. Add grated Ricotta Salata cheese
  10. Once the pasta is cooked, drain and toss with the sauce.
  11. Serve and top with grated Ricotta Salata, basil leaves and a drizzle of olive oil.
